Difference between control and operational picking?

So lately in YT videos I've been watching I've heard the term 'picking to control' being used. So what exactly is it? Does it apply to all locks or SFIC/LFIC locks specifically? Thanks in advance :)

It applies to interchangeable core locks. Control is the one that will remove the core. Operating (AKA change key) is what opens the lock normally.

Picking the lock. the key turns a little bit, and the lock core comes out in your hand.

Take a look at THIS vid from Xeo.

He first picks to 'operating'.... and opens the lock. Then locks it back up and
picks to 'control'....this doesn't open the lock, but allows the core to be removed.

You could also take a read through a recently posted article from mdc5150.
